You now can start and end your day with NBC on one street at Universal Studios Florida. Just up the road from The Tonight Show-themed Race Through New York Starring Jimmy Fallon, the park has soft-opened the Today Cafe, a retheme for the former Beverly Hills Boulangerie devoted to NBC's long-running morning talk show.
The Today Cafe will have its official grand opening on May 16, when Today's Al Roker and the team visits the park for a live broadcast. The cafe has named a dish in his honor — Al's Avocado Toast, which will be served topped with cherry tomatoes, artichokes, roasted red onions, and tomato aioli, accompanied by bread and butter pickles.
The avocado toast will be a seasonal option, as Universal's chefs are planning to offer a changing selection of favorite recipes from Today Show personalities.
Before the official opening, Today Cafe is operating under a soft opening, when hours and menu selections may vary. The regular menu will include breakfast and lunch selections including locally-roasted coffee, in-house baked pastries, sandwiches, and salads. And yes, beer and wine will be on the menu, too.

TweetIn my head canon, Universal now has ceded that corner to the New York Street that heads east into the park, while the Hollywood street to the north starts at the bathrooms.
It's a cafe ... i mean do we care that much? across the street is a hello kitty store. seriously.
This cafe seems like a better option than what was there before, so i like the change.

This is the park that put a Mummy and Twister attraction in New York. Really it’s about putting an updated breakfast location at the front of the park
And I thought some of the highlighted IP from ITV for the London Resort was weird... Synergise at any cost I guess.
Aardman didn't renew their IP deal with The London Resort, ITV replaced Aardman- long story short. Would be nice if The London Resort branded itself as the theme park home of British popular culture- would be even nicer if that long delayed project showed signs of actually ever progressing.

So much for the theme integrity of that spot since The Today Show set is Manhattan while the Beverly Hills Boulangerie it replaces correctly evoked California. Oh well.
